August 8, 2017Something amazing happened to us recently. Our house had been listed for two months with very few showings, even though the online hits were greater than any of our agent’s other listings combined. She said it was staged perfectly and priced right, and she did not know what was going on.
I remembered a friend of mine telling me years ago about her needing to sell her home by a particular date, or she would lose the home of her dreams. She told me she did a Novena to St. Jude and she got an offer at the very last moment. I never forgot that, so Paul & I decided to give it a try. This is what happened.

July 25, 2017I am so excited to share with you a quick video of the property we will be renting for at least a year in Costa Rica near Coco Beach on the Pacific Coast, starting the end of September. I believe it was “meant to be” since the name Casa de Bienestar apparently means “House of Wellness”, and the current owner used to hold yoga retreats there.  (Stand-by for info on my 2018 Costa Rican Raw Food Retreats in Paradise, eh?)

Superfoods is actually a “buzzword” given to describe those foods that are very nutrient-dense, containing high levels of much-needed vitamins and minerals. On my updated FAQ page (under INFO), I list the superfoods that are part of my regular regimen. If you look at the extensive nutrient value of these foods, you’d wonder why you would need to eat anything else!What happened to 2015?

Today marks a milestone for me. Â I have just completed my certification as an Holistic Nutritionist after seven weeks *(not consecutive) *of intensive studying, Â The content was extremely detailed and the depth of learning significant. Â The short time I was able to accomplish this goal was due to the strength of the background learning that I have acquired through Hallelujah Acres for all these years. Â I will now strive to apply this knowledge to practical application before offering my courses once more. Â My goal is still late Spring. February 25, 2014Just wanted to keep you posted on my diploma course for Holistic Nutritionist
certification.  There are four segments and today, I just completed my third exam with a final grade of 97%.  Eight months are typically assigned to complete this segment, but I slammed it within three weeks…whew!  It was an 800-page manual, typically used by Colleges as part of their nutrition courses.  Needless to say, I loved it so much, I couldn’t put it down!  I’ll take a little break before diving into my final segment.  Stay tuned!  I’ll be offering courses again as soon as this challenge is complete.Hallelujah Acres Culinary Academy

Just graduated from the Hallelujah Acres Culinary Academy. Five days of raw gourmet living at a top-notch facility - the Halleluljah Acres Lifestyle Centre in Lake Lure, North Carolina.
Because Hallelujah Acres is 85% raw, 15% cooked, most days there was one cooked dish at suppertime, but the rest was raw and all the foods we prepared were raw. Here is what we either made ourselves at our own personal workstations, or were served for meals. This is in addition to two BarleyMax and two carrot juices a day!
Raw: Gazpacho Soup, Thai Coconut Soup, Kale Chips, Almond Milk, Garlic-Onion-Rosemary Butter, Hummus made with sweet potatoes, Eggplant Bacon, Arugula Salad with Shaved Fennel & Red Radish Julienne with Lemon Mint Dressing, Seasoned Heirloom Tomatoes, Sushi, Marinated Portabello Mushrooms (as the “meat” for the Rubin sandwich, which also uses the Rye Bread, Swiss Cheese and Eggplant Bacon we made earlier in the week)
Raw Breakfast: Buckwheat Granola, Coconut Yogurt, Cantaloupe Smoothie with Mint, Mango-Green Grape-Chard & Lime Smoothie, Pineapple, Banana, Coconut, Protein Smoothie
Raw Desserts: Key Lime Pie, White Chocolate Raspberry Cheesecake with Mixed Berry Coulis, Pineapple Sorbet with Raspberry Coulis, Coconut Cream Macaroons with Carob Syrup, “Peanut” Butter and Banana Ice Cream, Carrot Cake with Vanilla Icing, Chia Pudding with fresh nectarines

With approximately thirty people at each of two showings, I presented a one-hour Raw Food Show at a recent Health Fair in Whitby, ON. We discussed alternatives for Sugar, Juices, Meat and Dairy and handed out samples after a discussion on each topic. Everyone was delighted to try the chia pudding, date snack, fudge, BarleyMax Berry, hummus, sprouts, mock salmon pate, and non-dairy butter, cheese and mayonnaise. The highlight of the day was when I blended the non-dairy butter and cheese into a sauce and poured it over zucchini “macaroni” to make a raw “Mac & Cheese”.

Tracy Ahn (see blog below) was instrumental in Younhee Kim attending my Raw Food Chef Level I and Raw Food Instructor Level II class, even though Younhee read and spoke very little English. Â I allowed this private class, so that she could enjoy the Alissa experience, and enable her to also teach Raw Food Chef certification courses in her home town in Michigan, USA. Â Her husband, Heejun, joined in the class as her translator and we were still able to complete the course on schedule. A radio and TV personality who has interviewed most of the key players in the alternative health industry, found that life and work had crept up on her, creating extra pounds and aches and pains.  She decided to immerse herself in a raw food experience to kick-start her way back to health.  She came with her toy poodle “Chili” and stayed locally, to partake of the Level I and Level II back-to-back course.  By day three, she was feeling lighter and exuberant about the changes she was feeling.  Alissa says:  “You feel better not within months or weeks…but within days!”  Christine can vouch for that!Korean Blogger now Certified!

I’m on my way to being certified as an Holistic Nutritionist.  I took my first of four exams today, with a mark of 94%.  Five months was allowed to complete this course.  But due to my experience over the past 15 years studying with Hallelujah Acres, I actually completed this course in seven days!  This Holistic Nutritionist Certification Diploma Course is recognized by the** Canadian Examining Board of Health Care Practitioners**.Classically trained chef, excited about raw

Tatjana Kovacevic is a classically trained chef who was heading up the salad bars at a large downtown Toronto restaurant.  She had a desire to train others in raw food preparation and came to my Raw Food Chef class for certification…to give her workshops credibility.  I assumed she would just spend her time in class so that she could be registered with Alissa Cohen and receive her certificate.  To my delight, she sat at the end of the table exclaiming about how great the food tasted.  This gives credibility to Alissa Cohen’s awesome recipes!Mommy...stop working!

Bonnie Ann Myre, another Health Minister from Chelmsford, Ontario (near Sudbury - a six hour drive), came for an overnight visit. I had my Level I Chef Certification materials all ready (must be customized by each teacher following only an outline provided by Alissa), and dining room table all set up for food prep demonstrations. The class went quite well with Bonnie Ann taking photos of all the food we prepared. Alissa recommends six recipes for the Level 1 class, but since Bonnie Ann was staying over, I had some Level II recipes prepared for supper. Whew…we were so FULL. On October 29th, Alissa Cohen’s office emailed Bonnie Ann’s official certificate to her…congratulations, Bonnie Ann, Raw Food Chef!Patsy is a fully certified Raw Food Chef

My husband and I and friends, Ian & Gayle Jackson, took a 40th Wedding Anniversary road trip to Ogunquit, Maine in September. We stayed in a cabin at Anchorage by the Sea. I took a daily walk along the shore path. The scenery was breathtaking! The last three days we moved into another cabin at Beach Knoll, Rockport, Massechusetts, where I met up with Susan C. and Tahisha who were also staying there. The three of us trekked out to a gorgeous retreat home on the shore of Gloucester for three intensive days with Alissa Cohen, her sister Stacey, and a staff of three, together with 34 other participants in her combined Level I, Level II and Level III training.A little bit about me...

I have been married 40 years to the best husband in the world, Paul. I have two sons. Both have terrific wives, and we all have dogs. My oldest son has my first grandchild, James.  I am pleased to say that we are expecting two more grandchildren this year!  I took an early retirement in 2009 from EDS (Electronic Data Systems) which had just been taken over by Hewlett Packard. I was a senior business analyst and webmaster for the General Motors media website. However, my whole life I have been Excited About Health! And therefore upon retirement, I’m following my passion to remain healthy the natural way, as God intended and to help others understand that they too don’t have to be sick!
